Roast Chicken
Roast chicken with a do it yourself pressure cooker made of dough. This shit is for real.
You’ll need:
Whole chicken (thawed), 4 to 5 lemons, sugar, salt, celery, sweet potatoes, carrots, garlic, shallots (or onions), EVOO, butter and salt and pepper. (Not pictured: flour and water for dough.)
You can use any root veggies you might have on hand but I’d keep carrots and celery in this recipe no matter what. Garlic and shallots, too. Mmmmmm.
Start by heating your pan or skillet with some EVOO and butter. If you want measurements – go to JCPenny’s bra section – let’s just do this.
While that’s melting and heating up start boiling about 3 cups water with 1/2 cup sugar and 1/8 or so cup of salt.
Slice your lemons and wait for your water to boil – when it starts to bubble, throw in your lemons and let the reduction begin. You’ll want it to keep a steady boil going but reduce the heat so you don’t have a mess on your hands later.
Dice up your veggies and onions, keep the garlic cloves whole but de-skin them. After your EVOO and butter has melted – start with the garlic cloves and onions or shallots – brown them and then add your veggies and brown as well (I did all my veggies in 2 phases).
Then brown your chicken on all sides (You can put the veggies right in your dutch oven if you plan to try the dough-pressure cooker, if not – your crock pot will cook this too!).
Then add your chicken to your pot as well.
And pour over your lemon reduction (but try not to let too many slices end up in your pot)
I left too many lemons – ideally only 3 or 4 slices. Whoops.
For the DIY pressure cooker dough all you need is to make a paste of flour and water with a dash of salt. I did 1 Cup flour with just under 1 C water (dash of salt) mixed to a good consistency, rolled the dough (using more flour as needed) and then placed my “snake” all around the top of my pot. You’ll seal it with the lid.
Crock pot cookers? You can try the dough – but I would generally skip that part for roasting a chicken in your crock pot.
It doesn’t have to be pretty.
Place your lip and push down just a bit for a good seal.
Place it in the oven at 350 for an hour – hour and half.
It smells amazing.
When it’s done, you’ll need a screw driver to pry the lid open.

One of the best things about roasted chicken is the crispy skin. I would definitely miss that! But the lemons are interesting.
