Around the end of every year I like to take in a homemade treat to my office that is easily transported, can’t melt or get soggy and is loved by all.

This holiday bark recipe fits the bill perfectly. It looks beautiful on a platter or wrapped into individual cellphone bags and each bite has sweet, salty, crunchy and chewy in it. This will warm even the coldest of December hearts and with only four ingredients it is a great recipe for people who hate to bake or cook.

Ingredients
  • 1 cup of shelled pistachio nuts (2-3 cups shelled)
  • 12 oz dark chocolate
  • 8 oz white chocolate
  • 3/4 cup dried, sweetened cranberries
Instructions
  1. Mix together the cranberries and pistachios and set aside.
  2. Melt the dark chocolate and the white chocolate, separately. You can either use double boilers or large, microwave safe bowls. Microwave on medium for 30 seconds, stir, and heat again for 30 seconds until the chocolate is completely melted. Melt the dark chocolate first and let it sit while you melt the white chocolate.
  3. When the chocolate is melted, stir 1/2 of the nuts and cranberries into the dark chocolate and then pour the mixture onto a large cookie sheet lined with wax paper or a silicone baking mat.
  4. Use a spatula to spread the mixture to about a 1/2 inch thickness.
  5. Drop the white chocolate by tablespoons over the dark chocolate. With the tip of a butter knife, swirl the chocolates together to create a marble pattern.
  6. Sprinkle remaining pistachios and cranberries over the chocolate, gently pressing it into the top.
  7. Chill until completely hardened, at least 4 hours.
  8. Break up the bark into pieces using gentle pressure. Some of the topping might come off but that is ok. The bark is very rich so break it into small pieces!
Notes

Buying pistachios pre-shelled is much easier than shelling a bag full, I can usually find pistachio meat at Trader Joes or Costco.

      Yum. I bought cranberries, cashews, and almonds yesterday to attempt a bark similar to this. Can’t wait!
